Another recipe...I made this one tonight. It's pretty good but next time I'll probably put more seasoning in it.
Enchilada Casserole
1 (10 oz) can of Enchilada Sauce
1 and 1/2 pound Ground Beef
1 teaspoon garlic salt
1/2 teaspoon onion powder
1 (16 oz) can of Refried Beans
1 (12 oz) package of corn tortillas
1 (8 oz) bag of Shredded Mexican Cheese
Preheat oven to 375 degrees. Brown beef and drain out the fat. Mix beef, refried beans and 1/2 cup of enchilada sauce. Dip enough corn tortillas to cover bottom of a casserole dish in the enchilada sauce. Then put beef mixture on top of the tortillas, put a layer of cheese on top of that and then do the corn tortillas again. Continue layering. Cover and cook for 20 minutes. Then let cool for 5 minutes and serve.
